I think the most indicated place to go is Maxwell Road Hawker Centre. It has many open stalls where you can see how the food is prepared. Besides, each of them is specialized on selling something... for example: at stall no 61 you can find banana juice, stall no 10 sells chicken rice... and so forth. cnr South Bridge Rd & Maxwell Rd.
